For a real crowd pleaser, wrap yuca dough around taco meat to make scrumptious Yuca Empanadas! These are appetizer-sized, but they can be made larger for family meals as well. Whatever size, these empanadas are crispy on the outside and bursting with mouth-watering taco flavor on the inside. Make extra! No one can get enough of these!

Healthy Eating Tip: Discover spice blends to elevate your healthy dishes immediately! It wasn’t until I started eliminating processed food from my diet that I started to really learn to cook. Before then, I would take some meat, and maybe some vegetables and/or pasta, and add some type of pre-packaged jarred sauce or flavor packet and call it dinner. I used to say I don’t really “cook,” I “prepare” meals. But once I decided I only want to eat “real”, whole-foods that were free of pesticides, chemical additives, artificial colors, and flavors, etc. I had to figure out how to make meats and vegetables into something delicious that my family actually wanted to eat. I remember wishing I could find a local course to help me better understand how to use herbs and spices.” I had no idea what herbs went well together or what most spices even were! One of my earlier discoveries was a company called Penzey’s Spices. At the time, Penzey’s had a local store where customers can smell samples of each spice and speak to a staff member who can answer questions. It was then that I discovered some incredible seasoning blends (such as the Chicken Taco Seasoning blend used in this Taco Meat recipe.) Other great blends include Sandwich Sprinkle, Greek Seasoning, Bavarian Seasoning, etc. Discovering these blends immediately improved the taste and nutritional profile of my cooking. Over time, I learned from reading the labels which herbs I enjoy and which go well together. Seasoning blends are a quick and easy way to elevate your healthy cooking immediately!
